Kanchkolar Kofta Curry/ Plantain Balls in a curry

Raw banana is a nutritious vegetable that (few know already!) can be delicious too, when cooked with the right ingredients. This is one such recipe that proves how tasty a humble raw banana can be. We utilize the whole banana plant, from the flowers to the stem, from peel to the fruit within. This recipe can be prepared for your daily meals and even for guests. Ingredients –

·         Plantain

·         Cumin Powder/ paste. Cumin seeds too if you want (optional)

·         Potatoes

·         Tejpata/ Bayleaf

·         Whole Garam masala (coarsely crushed cinnamon, cardamom and cloves) and Garam Masala Powder

·         Ada ( Ginger )

·         Holud/ Turmeric

·         Salt

·         Knacha Lanka/ Green Chillies

·         Curd

·         Sugar

·         Ghee

·         Oil

 

Preparation – 

·         Boil the plantains and peel them.

·         To increase the quantity, and also for binding purpose, add boiled potatoes and mash the two together.

·         Add salt, green chillies and a pinch of sugar to this.

·         Make small round balls out of the mash and deep fry them

·         Heat oil in a pan and temper with bay leaves, whole garam masala or cumin seeds.

·         Now mix well (so as not to form lumps) Ginger paste, turmeric, salt, chilli powder, cumin powder/paste, Garam Masala powder and curd in a bowl.

·         Add this mixture in the pan and keep stirring.

·         Add small amount of water if necessary.

·         Add salt & sugar.

·         Add the fried plantain balls to this.

·         Sprinkle ghee.

·         Mix in well and remove from heat to serve.
