Karela Ki Subzi/ Bitter Gourd Curry

Karela or bitter gourd is considered to be a highly beneficial vegetable. From skin to blood, your health will be benefitted, if you add this dish to your daily menu. Some also advice people with diabetes to consume this vegetable. The vegetable itself, does not have a pleasant taste and is defined appropriately by its name, “bitter” gourd. This recipe tries to elevate the taste of the vegetable and make it a favourite, even among children. Serve this with plain steamed rice or be adventurous and serve with the Indian flatbread, roti/phulka.

Ingredients –

  • Karela

  • Mustard seeds

  • Oil

  • Hing (asafoetida) 

  • Cumin seeds

  • Cumin powder

  • Onions

  • Cashew nuts (small amount)

  • Turmeric 

  • Sugar

  • Salt

  • Green chillies

Preparation –

  • Chop Karela to small pieces.

  • Heat Oil in a pan.

  • Add mustard seeds.

  • When it splutters add hing and cumin seeds.

  • Then add jeera powder.

  • Cook for a while.

  • Then add finely chopped onions.

  • Add broken cashew nuts.

  • Fry well.

  • Then add the karela, turmeric, mirchi, sugar and salt.

  • Cook till done.

  • Serve with rice/ roti.
