Karola Musur/ Bitter Gourd And Red Lentil Curry
Believe it or not, I love karela in most forms. And I keep looking for ways to incorporate karela in our daily diet on a regular basis. However, since not all members of my family share this love for kerela, I have to keep looking for a variety of recipes to appeal to their palate. With a family that has a history of diabetes, you can’t actually blame me for my partiality for karelas. And if you give a close look at the recipe, masoor is a good source of protein and vitamins; also notice that not too much oil or spice are added to it — making this recipe a healthy one for the entire family.
Ingredients:

Masoor dal ( Red Lentils handful)

Karola (bitter melon): 6

Onions (chopped)

Green chillies

Garlic paste or chopped
- Green chillies
- Turmeric
- Salt
- Chilli powder
- Mustard Oil
- About half (give and take) cup of water
- Cilantro (Coriander Leaves) — finely chopped
Method:

Cut the bitter melon in roundels

Add the bitter melons, chopped onions, green chillies and garlic paste in a pan

Now add the oil, salt, turmeric and chilli powders

Mix a handful of dal with water and add that in the pan

Now put the pan over low flame

Stir the contents continuously till everything gets cooked

Add chopped tomatoes and coriander leaves and keep stirring for a while

Switch off the flame when everything gets cooked and mixed nicely together
TIP: If a directly boiled vegetable does not appeal to you, you may lightly fry the bitter melon roundels before following the above mentioned process.
