Khub shahoj Alur Dom/ Easy Alu Dum

Alur Dom is a fascination of a Bengali person. There was a time when Sunday mornings started with it along with luchi on the side. Times have changed. Every Sunday it may not be luchi alur dom any more, but the fascination remains. They are consumed along with roti, parathas and even with bread on the side. (not to mention the fact that my cook has a fascination for alur dom with muri/puffed rice). Naturally, the quest for variations in alur dom recipe remains. This one is an easy one that came my way via my aunt, Mrs. Nandita Sanyal.

 

Ingredients –

  • Small potatoes (What we call in Bengali “notun alu”, the variant readily available in winter. However, if you are cooking this any other time of the year, chop the potatoes into halves or quarters depending on the size)
  • Oil
  • Onion paste
  • Salt
  • Turmeric
  • Sugar
  • Ground Coconut
  • Garam Masala
  • Green chili paste or you may use kashmiri laal mirchi for a fiery colour
  • Slit green chillies for garnishing (optional)
  • Cilantro finely chopped for garnishing (optional)

Preparation –

  • Boil the  potatoes
  • Heat oil in pan and fry the boiled potatoes with a sprinkle of salt and turmeric
  • Keep aside
  • Heat oil in a pan again and fry the onion paste
  • Add the fried potatoes to this and add turmeric, green chilli paste (or Kashmiri laal mirch), salt & sugar to taste. Cook till the spices get cooked.
  • Add garam masala. Cook for a little while more to allow the potatoes to absorb the flavour.
  • Add water to form the gravy of your desired consistency (I like it a little dry though).
  • When the concoction comes to a boil and your desired consistency is reached, turn off heat.

Now add some grated coconut and slit green chillies, give them a stir, and you are ready to serve.
