Knach Kaula r Khosha Bhorta (Mash made of Raw Banana Peels)

Bengali people are known for their expertise to make delightful edibles out of ingredients that are generally discarded. Vegetable peels top the chart. Potato-peels fried (with turmeric and salt in mustard oil with a sprinkle of poppy seeds about two minutes before taking off the fire) is a comfort food with rice and lentils for many. This recipe is a classic example in that category. Recipe was suggested by Nayana Afroz, whom her friends call Bhorta Queen or the Queen of Mashes.
Ingreditents
  • Peels of about 4 raw bananas
  • Kalo jeere or nigella seeds
  • Garlic — chopped
  • Mustard Oil
  • Green Chillies
  • Salt
  • Turmeric
Method
  • Chop the peels and steam with turmeric and salt. Drain and keep aside.
  • Heat Mustard oil in a pan and temper with the kalonji seeds.
  • Add the garlic and cook well.
  • Add the steamed peels and green chillies. Cook for a while.
  • When properly cooked, remove from heat and let it cool a little.
  • Now blend the entire concoction to make the mash.
  • Stir in a drizzle of mustard oil before serving (with steamed rice of course!)
