Kumror bharta/ Mashed Pumpkin

Bharta is a great favourite amongst the people of Bangladesh. They are extremely easy to cook and being light on spices, they always retain the food values. During the summer months, when the availability of vegetables become limited, we always look out for variation in recipes that can be cooked with the seasonal veggies. This pumpkin (can be cooked also with butternut squash) mash is one such recipe.

Ingredients –

  • Pumpkin (boiled with a little salt and mashed well)
  • Oil (preferably mustard oil)
  • Cumin seeds
  • Ginger paste
  • Kashmiri chili powder
  • Turmeric powder
  • Salt
  • Sugar

Preparation –

  • Boil the pumpkin and mash them well
  • Heat oil in a pan and add the cumin for tempering
  • Add the pumpkin mash
  • Now add the ginger paste
  • One by one add the turmeric powder, the chili powder and salt & sugar
  • Mix well
  • Allow some standing time and then serve luke-warm with steamed rice.
