Methi Begun/ Fenugreek leaves with Brinjal

Many might consider home-cooked food to be comfort food; and this recipe of methi shaak with begun is just that. Methi shaak is an amalgamation of nutrients and hence quite good for your health. Serve it as a side with plain steamed rice and get lost in the flavours of the melt-in-the-mouth brinjal and flavoursome methi shaak. The simple list of ingredients can try to fool you, but do not fall prey to that, this dish is quite tasty and elevates your daily menu. Ingredients –

  • Fenugreek Leaves/ Methi Shak
  • Brinjal
  • Kalo Jeere/ Nigella Seeds
  • Green chillies
  • Salt to taste
  • Turmeric

Preparation

  • Finely chop the Methi shaak
  • Cut the Brinjals into small cubes
  • Heat oil in a pan and temper with kalo jeere (nigella seeds) and Kancha lonka (green chillies)
  • Now add the Brinjal pieces
  • Add salt and turmeric powder
  • Keep stirring
  • Once it is half done, add the methi shak
  • The Methi shak will let its own water out, so do not add water.
  • Keep cooking at high flame till you see water in the pan; and then when the water reduces, lower the flame and cook it covered.
  • Once all the vegetables are cooked, and all the water has dried up, consider it done.
  • Serve with rice.
