Methi shak chochhori/Stir fried fenugreek greens

Methi leaves are known for the multi faceted health benefits they provide. From helping with bowels, to controlling lipid levels of the blood, from liver-function regulation to blood glucose level control – it can provide you with a plethora of goodness.

Ingredients:

  • Methi leaves/Fenugreek greens
  • Potatoes
  • Green chillies
  • Mustard seeds
  • Salt
  • Turmeric
  • Oil

 

Preparation:

  • Peel the potatoes and cut into small cubes
  • Heat oil in a wok and temper with mustard seeds
  • Add potatoes and fry
  • Add the fenugreek greens
  • Add salt, turmeric and green chillies and keep frying till masala is cooked
  • Now cover, reduce flame and cook until everything is done
  • All water should be evaporated

Note: Only use the methi leaves and very tender stems. The dish will taste bitter if you use hard stems
