Panch foron e alu begun/Potatoes and brinjals with Indian five spice mix

Panch foron is a spice mix that features in various Bengali recipes. Panch means five, and hence, it means that it is a five-spice mix. The usual spices in the mix include cumin (jeera), brown/ black mustard (kalo sorshe), fenugreek (methi), nigella (kalonji/kalo jeere) and fennel (mouri). Apart from panch foron, you will only see turmeric powder as a spice, so it is quite light on the stomach. Alu (potatoes) and begun (brinjal) is a classic combination, the softness of the potatoes and richness of fried brinjal lends the dish an amazing flavour profile. Try it for lunch and serve with plain steamed rice and earn rave reviews.

 

Ingredients:

  • Potatoes
  • Brinjal
  • Green chillies
  • Panch foron/Indian five spice mix
  • Turmeric powder
  • Salt
  • Sugar

Preparation:

  • Cut the potatoes and brinjals into small pieces
  • Heat oil in wok and add panch phoron
  • Add potatoes and brinjal and fry
  • Add green chillies and stir well
  • Add turmeric and fry the masala
  • Add salt and sugar
  • Stir and add a little water
  • When the veggies are cooked and the dish gets a mashed consistency, take it off flame
