Paneer Rezala

Paneer Rezala is a vegetarian Mughlai delicacy.  Here paneer cubes are cooked in a nut-based white gravy. Let’s take a look at this easy and tasty recipe

Ingredients –

  • paneer
  • Dry roast Cinnamon
  • Cardamom (black and green)
  • cloves
  • mace and nutmeg
  • poppy seeds
  • green chili
  • salt (to taste)
  • curd 300 gms
  • shahi garam masala powder (little)
  • maida 
  • oil 
  • ghee
  • bay leaves
  • dried red chilies
  • whole garam masala
  • onion paste
  • ginger and garlic pastes

Preparation –

  • Dry roast Cinnamon, Cardamom (black and green), cloves, mace, and nutmeg, and make a paste.
  • Make poppy seeds paste with green chili and a little salt.
  • Beat together curd, the masala pastes, poppy seeds paste, shahi garam masala powder (little), salt (to taste), and maida (to prevent curd from forming lumps — 2 teaspoons for 300 gms of curd).
  • Now heat oil (white) in a pan.
  • Then lightly fry the paneer cubes and set them aside.
  • Now add some ghee to the remaining oil and temper with bay leaves, dried red chilies, and whole garam masala (a little crushed — cinnamon, cardamoms, and clove).
  • Now fry onion paste, ginger, and garlic pastes.
  • When done add the beaten curd and cook till the oil separates. 
  • Cook in low heat. This prevents curd from forming lumps too.
  • Now add the paneer. 
  • Let the whole thing cook for a while. Then remove from heat and serve
