Paneer Rezala
Paneer Rezala is a vegetarian Mughlai delicacy. Here paneer cubes are cooked in a nut-based white gravy. Let’s take a look at this easy and tasty recipe –
Ingredients –
- paneer
- Dry roast Cinnamon
- Cardamom (black and green)
- cloves
- mace and nutmeg
- poppy seeds
- green chili
- salt (to taste)
- curd 300 gms
- shahi garam masala powder (little)
- maida
- oil
- ghee
- bay leaves
- dried red chilies
- whole garam masala
- onion paste
- ginger and garlic pastes
Preparation –
- Dry roast Cinnamon, Cardamom (black and green), cloves, mace, and nutmeg, and make a paste.
- Make poppy seeds paste with green chili and a little salt.
- Beat together curd, the masala pastes, poppy seeds paste, shahi garam masala powder (little), salt (to taste), and maida (to prevent curd from forming lumps — 2 teaspoons for 300 gms of curd).
- Now heat oil (white) in a pan.
- Then lightly fry the paneer cubes and set them aside.
- Now add some ghee to the remaining oil and temper with bay leaves, dried red chilies, and whole garam masala (a little crushed — cinnamon, cardamoms, and clove).
- Now fry onion paste, ginger, and garlic pastes.
- When done add the beaten curd and cook till the oil separates.
- Cook in low heat. This prevents curd from forming lumps too.
- Now add the paneer.
- Let the whole thing cook for a while. Then remove from heat and serve
