Roasted Asparagus

Asparagus is a spring time vegetable. The young shoots of this plant are usually eaten. It can be prepared in a number of ways. Asparagus is a popular ingredient in Asian style cooking. It can be prepared as an appetizer or a side dish; and can even be added to soups. It can be paired with vegetables, shrimp, chicken and other types of meat. By itself too it can create delicious recipes. Here is one such recipe where Asparagus is the highlight.

Ingredients
• 2 pounds of fresh asparagus
• Olive oil
• Salt according to taste and for sprinkling
• Black pepper that has been freshly ground

Preparations –
• Oven needs to be preheated to 400 degrees F
• The tough ends of the asparagus need to be broken off and peeled if they are thick.
• Drizzle oil over the asparagus that has been spread on a baking sheet
• Toss so that the asparagus is completely coated with the oil.
• Again spread the asparagus evenly over the baking sheet and sprinkle required amount of pepper and salt.
• Toss once more to coat
• Roast for around 25 minutes, until they become tender but are still crispy.
