Sheem Bhorta/ Broad-beans Mash

 

Sheem or Broad bean is a popular winter vegetable among Bengalis. It features in various winter dishes of Bengali cuisine. Here is a classic Bengali recipe using the vegetable sheem to make a bhorta. Bhorta is basically a mash. Sheem Bhorta is a mash that features the main ingredient Sheem, in this case, along with a handful of other ingredients that complement the main ingredient. Sheem itself has a beautiful taste and this recipe perfectly captures the taste without suppressing it with other strongly flavourful ingredients. This mash is best served with plain steamed rice. Ingredients:

  • Sheem
  • Salt
  • Turmeric
  • Green Chillies
  • Oil
  • Dry red Chillies (optional)
  • Onion paste
  • Garlic paste
  • Ginger paste
  • Mustard Oil

 

Preparation:

  1. Start by steaming the sheem in a pot of boiling water along with salt and turmeric
  2. Once the sheem is boiled, strain the water and grind the boiled sheem with green chillies to make a mash
  3. Heat oil in a kadai and temper it with dry red chillies if you want.
  4. Add in the onion paste, garlic paste and ginger paste.
  5. Keep stirring for some time before adding the sheem and green chilly mash
  6. Keep stirring again till everything is mixed and cooked completely.
  7. Season the mash with salt, give it a stir and turn off the heat.
  8. Drizzle some mustard oil on top and serve with steamed rice.
