Sukha aloo/Dry potatoes

Potatoes rank among the very few vegetables that are universally liked. Potatoes in some form or the other rank among the comfort food list of most people. This, added with the fact that potatoes also provide flexibility of getting absorbed in any kind of flavours they are put in, makes it easy for people to experiment with it. The Sukha Aloo recipe shall provide tang to your palate without much ado.

Ingredients:
• Potatoes (peeled and cubed)
• Dried red chillies (whole)
• Mustard (whole)
• Fenugreek (whole)
• Cumin (whole)
• Chilli powder
• Turmeric powder
• Black pepper powder
• Salt
• Oil
• Ghee

Preparation:
• Heat oil and ghee together in a wok
• Temper with dried red chillies
• Add the whole spices and fry till about 30-45 seconds
• Now add the potatoes and fry
• Cover and cook
• Add the powdered spices and salt after a couple of minutes
• Mix well and add a little water
• Turn flame off when potatoes are cooked and water is dried off
• Serve
