Chicken Do Pyaza
Do Pyaza is a south Asian curry and as is understandable from the name, cooked with a lot of onions. In this recipe, onions are actually added in two stages during the cooking procedure, and thus the name “do-pyaza” or two times onions. I have prepared it here with chicken, you can substitute it with mutton too or any other meat of your choice as a matter of fact.
Ingredients
- 1 kg boneless chicken (wash, clean and cut into medium pieces)
- 2 onions (sliced)
- 2 lemons
- 2-3 green chillies (chopped)
- 1 cup yoghurt
- 2 tsp ginger paste
- 1½ tsp garlic paste
- ½ tsp ground pepper
- 2 cloves
- 1 inch cinnamon stick
- 1 tsp chilli powder
- ¾ tsp turmeric powder
- Sprigs of cilantro leaves (chopped)
- salt to taste
- Cooking oil
Preparation:
- Heat oil in a heavy based pan
- Add half the sliced onions and garlic paste
- Stir fry for 2-3 minutes
- Add chicken and fry till brown all over
- Remove and set aside
- Add ginger paste, chilli powder, green chillies and turmeric powder
- Stir fry for half a minute
- Add cloves, cinnamon, yoghurt, salt, pepper and water
- Return chicken to the pan
- Bring to boil and simmer for 20 minutes
- Add the remaining onion and cook on low heat till all water evaporates
- Squeeze in lemon juice and garnish with chopped cilantro leaves
- Serve hot with paratha, rice or roti.
- You may also garnish with fried onions and finely chopped green chillies.
