Shahi Paneer
- Shahi Paneer as the name suggests is panner or cottage cheese cooked in a royal manner. It consists of a thick gravy and has a lot of tomatoes and cream. This tastes yummy with paratha and roti or Indian breads mostly.
Ingredients :
onion, chopped 1 no.
 - Ginger, chopped ½” piece
 - Tomatoes, skinned and seeded 1 no.
 - Big cardamom, crushed 2 nos.
 - Cinnamon stick 1/2″ pieces 2 nos.
 - Paneer, cut into cubes 250 gms.
 - Chili powder ½ tsp.
 - Turmeric powder ½ tsp.
 - Garam masala ½ tsp.
 - Almond paste – 1 cup
 - salt to taste
 
Preparation –
- Saute’ Chooped onions, ginger, garlic, cardamoms, and cinnamon sticks.
 - Grind the saute’d masala into a fine paste.
 - Saute again the ground masala with tumeric powder, chillie powder.
 - When the masala starts to give off aroma, add the almond paste and saute some more.
 - When the masala starts to leave the sides of the pan add tomatoes.
 - Finally add the paneer and cilantro water for gravy.
 
Variations to the recipe: Just paneer looked very plain, so I added some peas to it. It brought out the color and also enhanced the sweetness of the almond paste.
