Chinese Style Fried Rice

This is a recipe which Tahiti Ahmed, an Employee of San Jose (California) School District, had very graciously shared with me. Thus whenever I wanted to have Chinese food at home, I would try this Chinese Fried Rice and add some side dishes to it.

Ingredients –

  • Rice
  • Shrimp
  • salt & pepper
  • vegetables – carrots, beans, broccoli,cauliflour
  • fish sauce
  • garlic
  • onion
  • eggs
  • soy sauce
  • green chillies
  • salt to taste

Preparation –

  • cook Rice.
  • marinate the shrimps with salt & pepper.
  • Beat Egg with salt-pepper.
  • Heat oil in a pan & scramble eggs
  • Steam carrots, beans, brocolli & cauliflour. ( you can microwave or just par boil them)
  • Saute chopped garlic
  • Add  2 tsp fish sauce to it once a little brown.
  • once it starts smelling delicious , add the chopped onions
  • add the marinated shrimps and the steamed rice
  •  once a little fried, add the rice
  • add drops of soya sauce
  • add chopped green chilis
  • Add the scrambled eggs
  • saute and serve hot
  • Fry onions
  • Add shrimp and veggies when onion is semi-cooked
  • Now add rice and salt
  • Drizzle soya sauce
  • Add chopped green chillies
  • Mix well and serve hot
