Lamb in Cooked Yoghurt Sauce
Yogurt is a powerhouse of calcium and a good source for high-quality protein. Yogurt is nutrient rich because of its calories. Lamb is also a rich source of high-quality protein and an outstanding source of minerals and vitamins including iron. This is one of my favourite dishes for a get-together party with friends.
INGREDIENTS :
- A cup of cooked yogurt.
- 1 kg of lamb pieces cut from the leg piece.
- 12 and ½ cups of water.
- A cup of desi ghee.
- 1/3 cup of pureed onion.
- A tsp of ground garlic.
- 4 pieces of clove.
- 8 pieces of green cardamom.
- Salt according to taste.
- ¼ tsp of saffron.
- ½ a tsp of turmeric powder.
- 1 and a ½ tsp of coriander powder.
- ¼ tsp of cooked pepper powder.
- 3 tbsps. of chopped green coriander.
METHOD:
- Boil the meat in a pan of water till tender
- Let it stand for 2 to 3 minutes before draining the water.
- Let the meat cool and then wash under running water.
- Now add ghee followed by onion puree and garlic.
- Next add in the green cardamoms and cloves
- Finally add the saffron, cooked yogurt, salt, turmeric powder and the coriander powder in a pan.
- Add the meat to it.
- Keep stirring till the oil/ ghee separates
- Add water.
- Keep stirring after sprinkling in the pepper powder.
- Garnish with coriander leaves and serve hot.
To make the cooked Yoghurt:
- Whisk two cups of yogurt till they are smooth.
- Add ½ a cup of water and continue to whisk so that it is blended well.
- Turn the heat on high and cook this mixture
- Continue to stir till it starts to boil
- Then turn down the heat to low and continue to stir it occasionally till the proportion is halved and the colour changed
