Bhoona Khichuri
Khichuri is a South Asian preparation that is made with lentils and rice. Bhuna Khichuri is quite a delicious version of the popular Khichuri from Bangladesh. It is a richer version of the plain Khichuri. This recipe is more like a pulao than a plain khichuri. Try it with fried Elish mach or with vegetables.
Ingredients –
500 gms of Gobinda Bhog Rice
250 gms of Green Gram or Moong Dal
250 gms of Bengal Gram or Cholar Dal
250 gms of Onions
1 tsp of ginger paste
4 pieces of clove
1 inch of cinnamon stick
3 pods of green cardamom
4 pieces of bay leaves
6 tbsps of white oil
½ tsp of turmeric powder
½ tsp of sugar
1 tbsp of ghee
salt according to taste
Method of Preparation-
- Heat up a dry pan and fry the green gram until it turns brown.
- Boil the Bengal gram to make it soft but be sure not to boil it completely.
- Slice the onions and fry till they become light brown.
- Add in cloves, cinnamon, green cardamoms as well as bay leaves to oil heated in a pan.
- Add the rice and fry till it turns light brown in color, then add in turmeric and the ginger paste
- While continuing to sauté add in the pulses.
- Pour water into the pan so that all the rice and pulses are completely immersed in water.
- Cover it and cook for about 10 to 15 minutes on a low heat while stirring it occasionally. (check whether the rice is cooked by taking a few grains on a spatula)
- Finally add in the fried onions and then remove from the heat.
- Serve it hot after spreading ghee on the top.
