Veg Hara Bhara Kebab by Aparna Bose
This recipe is by Aparna Bose, a home cook and also the Proprietor of Gograshe – a food catering organization.

Ingredients
- 
Palak/spinach- 500 gms
 - 
Green peas- 1 cup
 - 
Coriander- 1 bunch
 - 
Green chillies- 2/3
 - 
Boiled potato- 2 medium
 - 
Besan/gram flour- 4tbsp
 - 
Kaju/cashew – 2 tbsp
 - 
Ghee- as required.
 - 
Salt – as per taste
 - 
Sugar- optional
 - 
Amchur powder- 1tsp
 - 
Red chilli powder- 1tsp or more
 - 
Jeera/cumin powder- 1tsp
 - 
Garam masala powder- 1tsp
 - 
Methi/fenugreek powder- 1/4 tsp
 - 
Hing/asafoetida – 1/4 tsp.
 
YIELD- 10 to 12 approx
Preparation:
- Boil the green peas and keep them aside to cool. In the same water blanch the clean spinach leaves and drain the water completely.
 
- Blend together the boiled peas, coriander leaves, chillies and spinach.
 
- Bhuno/saute kaju in ghee till brown. Cool and grind . In the same oil stir the besan till it turns light brown and gives out a nice aroma .
 
- Mash the potatoes and add the paste, kaju and besan nicely with all the spices, salt and sugar.
 
- If you find the kebab mixture too sticky or mushy, add a little bit of bread crumbs to it.
 
- Now divide the mixture into equal portions and form into patties. Fry the kababs turning and brushing each side with generous amount of ghee.
