Tok Jhal Mishti Tomato (Hot And Sweet Tangy Green Tomatoes) by Aparna Bose

 

A spicy and savoury recipe by Aparna Bose, a home cook and also the Proprietor of Gograshe – a food catering organization.

 

Ingredients

  • tomatoes (250 gms)
  • peanuts(2tbsp)
  • grated coconut (2tbsp)
  • sesame seeds ( 1tbsp)
  • half a bunch of coriander leaves/ cilantro (chopped )
  • few curry leaves,
  • green chillies

 

Preparation

  • Dice the tomatoes (250 gms)
  •  IN a fry pan heat about a tablespoon of oil and  roast the peanuts(2tbsp), grated coconut (2tbsp), sesame seeds( 1tbsp), half a bunch of coriander leaves/ cilantro (chopped ), few curry leaves, green chillies.
  •  Once the ingredients turn aromatic, cool and blend into a paste.
  •  Heat mustard oil and temper with mustard seeds, curry leaves and hing. Add the tomatoes and haldi. Stir on a high flame.
  •  Add salt and one tablespoon full jaggery powder or grated jaggery.
  •  Add the paste.
  •  Give it a good stir and cook covered for a few minutes on a low heat.
  •  Take off the lid. Check the seasoning. Add more salt or jaggery to get the adequate flavour.
  •  Garnish with green chillies and coriander/ cilantro.
