Tok Jhal Mishti Tomato (Hot And Sweet Tangy Green Tomatoes) by Aparna Bose

Ingredients
- tomatoes (250 gms)
- peanuts(2tbsp)
- grated coconut (2tbsp)
- sesame seeds ( 1tbsp)
- half a bunch of coriander leaves/ cilantro (chopped )
- few curry leaves,
- green chillies
Preparation

Dice the tomatoes (250 gms)

IN a fry pan heat about a tablespoon of oil and roast the peanuts(2tbsp), grated coconut (2tbsp), sesame seeds( 1tbsp), half a bunch of coriander leaves/ cilantro (chopped ), few curry leaves, green chillies.

Once the ingredients turn aromatic, cool and blend into a paste.

Heat mustard oil and temper with mustard seeds, curry leaves and hing. Add the tomatoes and haldi. Stir on a high flame.

Add salt and one tablespoon full jaggery powder or grated jaggery.

Add the paste.

Give it a good stir and cook covered for a few minutes on a low heat.

Take off the lid. Check the seasoning. Add more salt or jaggery to get the adequate flavour.

Garnish with green chillies and coriander/ cilantro.
