Chicken Kosha
Chicken Kosha is a dish that is a favourite in most Bengali household. This dish gets its name from the thick gravy that coats the chicken pieces instead of a curry, which is more watery. Chicken Kosha or curry can be made using curd/yoghurt or tomatoes. In this recipe we find the gravy being based on tomatoes, onion and ginger-garlic along with other powdered masalas. This tasty chicken kosha can be served with steamed rice, pulao, biriyani, roti, naan or paratha. Serve it to guests, or prepare for lunch or dinner for your family, this recipe is sure to impress all.
Ingredients
- Chicken
- Curd
- Red Chili POwder
- Dhania Powder/ Coriander Powder
- Jeera powder/ Cumin powder
- Onions
- ginger and garlic paste
- tomato paste
- green chillies
- garam masala
- nutmeg
- mace
- salt
- cooking oil
Preparation
- Marinate the meat for half an hour with 2 table spoons of curd, 3 tea spoons each of red chilly powder, dhania powder, jeera powder, garam masala powder, salt and 1 tea spoon each of sugar and turmeric powder.
- Heat oil.
- Add the whole garam masala and bay leaves and red chilly.
- Add the onion paste and stir till it becomes brown.
- Once the onion browns, add ginger and garlic paste and stir well.
- Add tomato paste/ pulp stir till colour becomes dark.
- Add the marinated chicken. Fry well.
- Add half a cup of water, chicken emits water/ juices when cooked so don’t add too much.
- Let the meat get tender. Now, kosha needs to be dry so put the vessel on a medium-high flame and don’t cover it.
- Let the gravy boil (bubble) and thicken as much as possible. Add (optional) whole green chillies and put some powdered garam masala on top.If I have nutmeg and mace at home, I add half teaspoons each while marinating. Also, if the garam masala is freshly ground (dry roast ingredients and grind) then I sprinkle from top. If I use store-bought garam masala I use it while frying the meat, else it does not cook well. Also you can minus the tomato (if you don’t have it at home), and add ketchup just before you add the water. In that case check for salt since ketchup has salt too.
