Chicken with Bok Choy

Bok Choy or Pak Choy is a type of Chinese cabbage, which has been a part of Chinese cuisine for centuries. This vegetable is also known for its medicinal properties. Bok choy has grown popular and is used in American cuisines as well. Bok choy makes this chicken dish tasty as well healthy. Healthy usually means something that has just been boiled but in this recipe the addition of various sauces like soy and oyster sauce along with aromatic ingredients like garlic and ginger, uplifts the flavour of the dish. All you need is some fried rice or chow Mein and you are set for an amazing and healthy meal. You can also serve it with steamed rice.

 

Ingredients:

  • chicken (thighs or legs without bones or chicken tenders)
  • 3/4 tbsp. soy sauce
  • 3/4 tbsp. cornstarch
  • 1 lb. Bok Choy/Baby bok choy
  • 1/2 c. water
  • 1/4 tsp. salt
  • 1 slice ginger root
  • 4 slices garlic
  • 1 tbsp. oyster sauce (or soy sauce)
  • 1 tbsp. soy sauce
  • 1 tsp. sugar
  • 1 tsp. cornstarch
  • 1/4 c. water

Method:

  • Slice the chicken
  • Add some soya sauce and mix well
  • Keep it aside
  • Heat the pan and add 4 tablespoons oil.
  • Stir fry the Bok Choy with 1/4 teaspoon salt.
  • Add 1/2 cup water till it becomes cooked and the vegetables become limp
  • Again heat another pan and then add 4 tablespoons oil.
  • Add ginger roots and keep stirring till fragrance comes out.
  • Add the chicken pieces and keep stirring.
  • Add 3/4tbsp.cornstarch and turn the heat to high and stir
  • Remove from heat and pour on top of the Bok Choy (or you may stir in the Bok Choy to the chicken). You are ready to serve!
  • I had also added chilli sauce and sweet and sour sauce to enhance the flavour and the outcome was great. Enjoy!
