Palong Begun Bhaja/Spinach brinjal Stir-Fry
Whenever my husband goes vegetable shopping, he cannot resist the lure of fresh greens; and especially in winters, spinach comes regularly to my kitchen. Naturally I have to keep juggling between one recipe and another to provide variety without using too much oil or too many spices.
Ingredients:
- Spinach
 - Brinjal (for 1 big bundle of spinach, take a medium brinjal)
 - Garlic (finely chopped)
 - Mustard seeds
 - Green chillies
 - Salt
 - Sugar
 - Oil
 
Preparation:
- Chop the spinach (use only leaves and tender stems)
 - Cut the brinjals into medium-sized cubes and smear with salt and sugar
 - Fry well, drain excess oil and keep aside
 - Heat a little oil in a wok and temper with mustard seeds and chopped garlic
 - Break the chillies and add
 - Now add the spinach
 - Cover and cook without water
 - When the water is evaporated, add the fried brinjals and mix well
 - Again, let all water get evaporated
 - Turn off the flame
 - Serve with steamed rice
