Palong Begun Bhaja/Spinach brinjal Stir-Fry

Whenever my husband goes vegetable shopping, he cannot resist the lure of fresh greens; and especially in winters, spinach comes regularly to my kitchen. Naturally I have to keep juggling between one recipe and another to provide variety without using too much oil or too many spices.

Ingredients:

  • Spinach
  • Brinjal (for 1 big bundle of spinach, take a medium brinjal)
  • Garlic (finely chopped)
  • Mustard seeds
  • Green chillies
  • Salt
  • Sugar
  • Oil

 

Preparation:

  • Chop the spinach (use only leaves and tender stems)
  • Cut the brinjals into medium-sized cubes and smear with salt and sugar
  • Fry well, drain excess oil and keep aside
  • Heat a little oil in a wok and temper with mustard seeds and chopped garlic
  • Break the chillies and add
  • Now add the spinach
  • Cover and cook without water
  • When the water is evaporated, add the fried brinjals and mix well
  • Again, let all water get evaporated
  • Turn off the flame
  • Serve with steamed rice
