Lau-Chingri/ Bottlegourd with Shrimps
‘Lau’ or Bottle Gourd offers an array of health benefits including promoting weight-loss and controlling blood-pressure. It is also extremely low in fat and cholesterol. This light recipe tastes very good with the addition of shrimps and is actually good for your health too.
Ingredients:

Bottle gourd

Shrimp
-
Cumin (whole)
-
Bay leaf
-
Cumin paste
-
Turmeric paste
-
Chilli paste
-
Salt
-
Sugar
Method:

Finely chop the bottle gourd
-
Heat oil in a pan
-
Temper with cumin seeds and bay leaf

Add the shrimps and fry
-
Add the cumin, turmeric and chilli paste and cook till oil separates

Now add the bottle gourd and sprinkle salt
-
Cover and cook in low heat
-
The bottle gourd should release enough water for cooking. If not, then add a little water
-
When the bottle gourd is fully cooked, add a little sugar
-
Add a couple of slit green chillies (optional) and take it off the flame
-
Serve in room temperature
