Baked Bhetki

Bhetki is popular fish that features widely in Indian cuisine, and I personally love cooking with Bhetki. The most famous being fish fry. But well, sometimes we need to find healthier options. This recipe of mine is a continental and healthy take on Bhetki. It is easy to prepare, and has some of the most amazing aromatic ingredients like onions and capsicum. The fish itself is left untouched, so that the great flavours of the fish can be captured through the baking process. It can be prepared if you want to have a light dinner with toasted bread and a side of sautéed vegetables.

Ingredients:
• 500 g betkti fish (bhetki machh)
• 1 onion
• 1 tomato
• 1 capsicum
• 1 green chilli
• ½ tsp ground cook pepper
• salt to taste
• butter

Method:
• Cut the fish into square pieces.
• Cut the onion, tomato and capsicum into rings. Chop the green chilli.
• Place a foil on a baking tray, and place the fish pieces. Place the onion, tomato and capsicum rings on top of the fish. Sprinkle with salt and cook pepper. Add a dollop of butter to each of the fish pieces.
• Bake the fish preparation in pre heated oven for 8-10 minutes.
• Serve hot.
