Bread and veggies and bread hotchpotch By Mahua Sen

If the Corona pandemic has taught us anything, it is to value food, value essentials, not to waste. And we all are doing so much around the house, that we are also trying to make life simpler. Hope after this phase is over, we shall still believe in simple living and high thinking. This recipe evolved from the need to use up leftover stuffs.

 

 

 

Mahua Sen is a lawyer by profession and is admired by her friends and family for her jovial nature and sartorial sensibilities. And as any other woman, she balances her home-front even when work pressures are back breaking and dotes on her daughter.

 

 

INGREDIENTS:

  • Bread — 4 pieces — each sliced into squares roughly.
  • Your choice of Vegetables — diced into small pieces. I used — carrots, potatoes, beans, cauliflower, peas, onions, garlic, green chillies.
  • Tomato sauce
  • Soya sauce
  • White oil
  • Maggie Magic masala
  • Salt to taste
  • Eggs — 2 (scrambled)

 

PROCESS:

  • Heat oil in a kadai.
  • Add onion and garlic in it and stir till it changes its color to golden brown.
  • Now put all the vegetables in it and add salt.
  • Stir it and when the vegetables becomes tender, add the pieces of bread.
  • Turn down the flame and add tomato sauce, soya sauce and magic masala as per your taste, and stir constantly until the bread soaks the sauce.
  • After 3-4 minutes it will be ready.
  • Serve it with scrambled eggs garnishing on the top.
  • Carbs, protein, and vitamins — all served in a plate.
