Soybean Momo with Spicy Tomato Chutney by Manjunath D. Naik

The person who cooks in my parent’s household takes pride in emulating all that we eat for my purely vegetarian mother. This is one such sample recipe from his treasure trove that tastes really delectable. This is Shri Manjunath D. Naik happily holding his creation.

 

 

 

Ingredients

  • Maida (flour)
  • White  oil
  • Salt
  • Soda bi  carbonate
  • Sugar
  • Soybin  granules
  • Yellow, green  and  red  bell  pepper  (or any bell pepper of your choice or is handy)
  • Green  chillies
  • Pepper  powder
  • Ginger
  • Coriander  leaves (Cilantro)
  • Tomatoes
  • Mustard seeds
  • Dried Red chillies
Method 
  • Mix  salt  little  sugar  little  soda  bi  carbonate  and  white  oil  with  maida  and  make  a dough  with  warm water. Keep  aside
  • Soak  soybin granules for some time  in  warm  water  and  then  boil  it with  little salt
  • Make a paste of  boiled  soybin,  ginger,  green  chillies  and  coriander  leaves
  • Heat  white oil
  • Put  finely chopped bell  peppers
  • Saute  for  few  minutes  and  add  soybin  paste   salt  and  little  sugar
  • Fry  it  for  some time
  • Then  add  pepper  powder
  • Mix  it  well  and  remove  from  the heat
  • Make  some  portions  of the  dough
  • Roll  each  portion  and give  round  shape
  • Size  should  be  like  puri
  • Put  soybin  mixture  inside  of  each  portion, and  seal to give shape like momo
  • Steam  it  for  20  minutes
  • Remove  from  the  steamer  and  serve  it  with  the spicy tomato chutney
TOMATO  CHUTNEY
  • Roast  few  tomatoes  on  a pan
  • Mash the tomatoes well
  • Make  a  paste  of  roasted  tomatoes  along with little  ginger,  few  green  chillies,  and  coriander leaves Heat  little  white oil add  1 or  2  whole  dried  chillies  and  little  whole  mustard  seeds
  • Pour  tomato  mixture  into  oil
  • Add  salt  and  little  sugar
  • Cook  for  few minutes
  • Remove  from the  heat
  • Serve in room temperature
