Chicken or Mutton Rezala

Rezala is one of the most well known recipes which is prepared for special occasions.  It is basically chunks of meat cooked in yoghurt, coconut, cream and cashew nut paste. It is not only fragrant but has a delicious texture too with the poppy seeds paste. Serve it with your favourite Indian flat bread to make any meal special — with or without guests!

 

Ingredients:

  • Mutton or chicken
  • Yogurt
  • Poppy seed paste
  • Cinnamon powder
  • Onion-garlic paste
  • Green chilli paste
  • Dried red chillies
  • Salt
  • Sugar
  • White oil
  • Ghee
  • Kewra water

 

Preparation:

  • Beat the yogurt with poppy seed paste, cinnamon powder, a little onion-garlic paste, green chilli paste, salt and sugar and mix well
  • Marinate the meat with this yogurt for 3/4 hours
  • Heat oil and ghee together in a pan and temper with dried red chillies
  • Drain the meat from the marinade and add to the pan
  • Fry well to seal in the moisture
  • Now add the yogurt mixture from the marinade
  • Bring to a boil
  • Cook in low heat or pressure-cook till meat is done
  • Add some ghee and kewra water, remove from heat, allow some standing time and serve
