Dry Chatpata chicken

Dry Chatpata chicken is just what the name suggests. It is tasty and yummy and can be made chat pat or in a jiffy.  But just a word of caution – This is not for the faint hearted, as it is a little spicy. However, you can always tweak the spice and oil level to suit your taste and needs. Serve it with pulao or paratha and sit back to soak in all the flavours!

Ingredients:

  • chicken — 500 gms
  • onion — 500 gms (half paste and half chopped)
  • salt — according to taste
  • Sugar — according to taste
  • Chilli Powder — according to taste
  • Ginger paste — one and half tea spoon
  • Dried Red Chillies — 3-4
  • pepper — 1 tsp (add l more if you like too spicy)
  • Amchur (dried mango) Powder — 1 tsp
  • butter — 2 tsps
  • Cinnamon — 2″ stick (broken to small pieces)
  • Oil
  • Ghee

Preparation:

  • Wash chicken pieces and pat dry
  • Keep aside oil, ghee, and half the quantity of red chilly powder and sugar.
  • Marinate chicken with all the rest of the spices for 15-20 minutes.
  • Heat oil and ghee together in a pan.
  • Add red chilli powder and sugar
  • Stir well
  • Add chicken along with the marinade
  • Simmer and cook until done, stirring occasionally.
  • Garnish with dried red chillies and serve
