Sorsher Tel o Vinegar e koshano Mangsho/Meat marinated in Mustard oil & Vinegar

Ingredients:

Chicken/mutton (mutton tastes better for this recipe)

Vinegar
-
Mustard oil
-
Ginger-garlic paste
-
Chilli powder
-
Onions (chopped)
-
Green chillies (chopped)
Method:

Cut the meat into small pieces.

Marinate it in equal amount of mustard oil and vinegar. (Make sure that the meat is completely submerged in the oil-vinegar mixture during marination)

For 6 people’s servings, add about half a bowl of ginger garlic paste (you may vary it as per your taste).

Put equal amount of salt and sugar per your taste

Add lots of chilli powder to make it spicy.

Marinate for about 3 hours for best results, though I have never kept it for more than 2 hours.

Fry onions in mustard oil (this is optional as it would taste equally good without onions)

Add chopped green chillies

Then pour the marinated meat in the pan and fry

Once the oil is separated out from the meat and the dish takes a deep brownish red colour, you know its cooked
Note: water is not used anytime during marination or cooking.. its simply mustard oil and vinegar..
