Alu-Kanchkola-Kumror Torkari by Tahiti Ahmed/ Potato- Plantain-Pumpkin curry

This is a very simple recipe yet a very tasty one. This very ghorowa (homely) recipe is from Tahiti Ahmed.

Ingredients

  • Alu/ Potato
  • Kanchkola/Plantain
  • Kumro/ Pumpkin
  • Whole coriander seeds/ Gota Dhone
  • Cumin / Jeere
  • Mustard/ Shorshe
  • Panch Foron/ Five spices
  • Shukno Lonka/ Dry red chillies
  • Tejpata /Bayleaves
  • Peyaj /Onion
  • Roshun/ Garlic
  • Salt
  • Turmeric Powder

 

Preparation

  • Heat oil in a pan and fry Dhone, jeere, Shorshe,Panch Phoron, Shukno Lonka and tejpata or Cumin seeds, mustard seeds, panch Phoron, dry red chillies and bayleaves
  • Add chopped onion and garlic paste
  • Saute
  • Now add the cubed potato, Plantain and pumpkin
  • Keep stirring and add salt, turmeric powder.
  • Add a little water.
  • Let them cook till the vegetables are done. Remove from heat, cover and allow some standing time.
  • Once done, serve hot with rice.
