Alu-Kanchkola-Kumror Torkari by Tahiti Ahmed/ Potato- Plantain-Pumpkin curry
This is a very simple recipe yet a very tasty one. This very ghorowa (homely) recipe is from Tahiti Ahmed.

Ingredients
- Alu/ Potato
- Kanchkola/Plantain
- Kumro/ Pumpkin
- Whole coriander seeds/ Gota Dhone
- Cumin / Jeere
- Mustard/ Shorshe
- Panch Foron/ Five spices
- Shukno Lonka/ Dry red chillies
- Tejpata /Bayleaves
- Peyaj /Onion
- Roshun/ Garlic
- Salt
- Turmeric Powder
Preparation
- Heat oil in a pan and fry Dhone, jeere, Shorshe,Panch Phoron, Shukno Lonka and tejpata or Cumin seeds, mustard seeds, panch Phoron, dry red chillies and bayleaves
- Add chopped onion and garlic paste
- Saute
- Now add the cubed potato, Plantain and pumpkin
- Keep stirring and add salt, turmeric powder.
- Add a little water.
- Let them cook till the vegetables are done. Remove from heat, cover and allow some standing time.
- Once done, serve hot with rice.
