Chapor Ghonto / Vegetable and Lentil Cake Mish-mash

Bengalis might be famous as fish lovers but they have an enriched collection of vegetarian dishes as well. Chapor Ghonto is exactly that. My mom is a vegetarian and thus she has the most delectable vegetarian recipes. This recipe is from her kitchen, it is quite easy to prepare. “Chapor” is basically a lentil patty that is cooked with a host of vegetables to create a “ghonto”. This mish-mash has some amazing seasonal vegetables with a spice blend that is popularly used in many Bengali dishes. The Chapor itself is easy to make. Go ahead and prepare this for vegetarians and non-vegetarians, it is sure to be loved by all.

 

Ingredients:

For Chapor/ Lentil patty

  • Matar Dal
  • Salt
  • Sugar
  • Kalo Jeere/ Nigella Seeds

For the Ghonto/Vegetable Mish-Mash:

  • Potol/ Pointed Gourd
  • Kumro/ Pumpkin
  • Aloo/ Potatoes
  • Jhinge/ Ridge Gourd
  • Kach Kala/ Raw Banana (optional)
  • Ranga Aloo/ Sweet Potato (optional)
  • Thor/ Banana Stem (optional)
  • Tej pata/ Bay leaf
  • Panch Phoron
  • Dhone guro/ Coriander powder
  • Jeere guro/ Cumin powder
  • Ginger Paste
  • Atta mixed with milk
  • Salt
  • Sugar
  • Mustard Oil
  • Ghee

Preparation

  1. Soak matar dal overnight in water and grind it in morning to make a fine paste. Add in sugar and salt to season it.
  2. Add kalo jeere to the ground up matar dal, make small patty and fry the patties.
  3. Cut potol, kumro, aloo and jhinge into small and equal sized pieces.
  4. You can also add kach kala, ranga aloo and thor to the vegetable mish-mash. If you add thor, cut it, boil it with salt, strain from water and keep it aside till needed.
  5. Heat mustard oil in a pan and add in bay leaf and panch phoron. Then add in the cut vegetables.
  6. After frying for some time, add a little bit of cumin and coriander powder followed by ginger paste. Keep stirring till the masalas are well-done, add some water and cover the pan till the vegetables are boiled.
  7. After some time, open the lid to add in the atta mixed milk. Keep stirring till the mixture becomes dry.
  8. Now add in the fried lentil patties, keep some aside for garnishing. Then add salt and sugar to season the dish.
  9. Mix the patties carefully so that they do not break.
  10. Finally spread ghee on the top and turn off the heat.
  11. Serve after garnishing with the lentil patties that you had kept aside.
