Doi phulkopi/cauliflower with yogurt

If you love or travel around the Eastern Metropolitan Bypass in Kolkata, you shall often notice farmers from the suburban areas queuing up with fresh produces, especially in the winter months when the sun is pleasant enough for them to sustain the outdoors. During winters, you shall spot many such vendors offering fresh cauliflowers. The lure is irresistible. And when the fridge gets overstocked with cauliflowers, one has to look for variations in recipes. This is one such – low on efforts, high on taste.

Ingredients:
• Cauliflower (cut in medium-sized florets)
• Ginger paste
• Yogurt
• Turmeric powder
• Cumin powder
• Chilli powder
• Salt
• Sugar
• Whole garam masala (cinnamon, clove and cardamom)
• Oil/ghee (clarified butter)

Preparation:
• Rub turmeric and salt on the cauliflower florets and fry
• Marinate these fried florets with a little sugar, cumin powder, yogurt, ginger paste, chilli powder and a little oil and keep for 20 minutes
• Heat oil/ghee and temper with whole garam masala crushed coarsely.
• Add the marinated cauliflower
• Cook on low flame till done.
Note: You can cook this dish even without marinating the cauliflower. In that case, beat yogurt with all powdered spices and cook it along with the fried florets.
