Food at Chhayabrita is an elaborate affair that Mr. Siddique takes pride in cooking; and pampers his guests with them at every mealtime. We experienced that during our stay at Chhayabrita, the cute little guest house with a magnificent garden, inviting verandah and lovely collection of books. And what’s more? He is one cook who never minds sharing is secrets! You just have to ask if you want to remake one of his creations at home; and he shall happily oblige with recipes and special tips to make the dish more delectable. Sheem Paturi (as he calls this dish) is one such recipe.

Ingredients:

  • Kochi Sheem/Young Flat Beans
  • Kalo Jeere/Kalonji
  • KachaLonka/Green Chillies
  • Mustard Paste
  • Poppy Seed Paste
  • Salt
  • Sugar
  • Mustard Oil

 

Preparation:

  1. Prepare the young sheem, by cutting off the veins on both sides of the beans.
  2. Heat mustard oil in a pan and temper it with kalo jeere, then add kacha lonka and salt, according to your taste.
  3. Keep stirring and fry the beans lightly.
  4. Next add some mustard paste and poppy seed paste.
  5. Finally add some water, salt and sugar.
  6. Let it come to boil and when the gravy thickens, turn off the heat and serve hot.
