Mach er Kochuri/ Fish Kochuri by Soutik Singha
Mach er Kochuri or Fish Kochuri is a variation of , say Koraishuti or Hing er kochuri. But the difference is, at times Mach er kochuri doesn’t need an embellishment, or accompaniment and can be served as a snack by itself. This recipe was kindly contributed to me by South Singha, an Engineer by profession.
Ingredients –
- Flour
- Ghee
- salt
- Fish
- chholar dal/ Bengal gram lentil
- onion
- ginger-garlic paste
- garam masala
- sugar
- oil
- green chilies
Preparation-
- Knead and prepare a dough with flour, water, a pinch of salt, sugar and ghee. Keep aside.
- Boil the fish with salt & turmeric
- Make a paste of the fish. Throw away the bones and the skin.
- Soak the Chholar Dal 12 to 14 hours earlier
- Make a paste of the Chholar dal
- Heat oil in a pan and fry chopped onion, ginger-garlic paste, chopped green chilies,a dash of lemon and garam masala.
- Now add the fish paste to this and keep stirring.
- Add the Dal paste and add salt & Sugar
- Once this paste becomes absolutely dry, add some coriander leaves to it.
- Let this filling cool
- Make small balls out of the kneaded flour, fill small portions of this filling and make round shapes.
- Deep fry
