Raw Mango Condiment / Knacha Aam Makha

There are certain things that transport you directly to your childhood. The sheer sight and smell of Knacha Aam Makha reminds me of the condiments (and the variety of it) that my maternal grandmother served with lunch. She had a penchant for using seasonal produces and whipping up varieties of dishes and condiments with them. The spicy zest of kasundi blends beautifully with the tang of raw mangoes and the piquant green chillies to make this tangy and spicy delectable.

 

Ingredients:

  • Raw mangoes
  • Salt
  • Kasundi (Bengal Spicy Mustard Sauce)
  • Green Chillies

Method:

  • Grate the raw mangoes in a glass or stone bowl
  • In the same bowl, marinate it with salt and let it sit for a few hours
  • Be easy with the salt, since the kasundi you shall add would also have salt
  • Add finely chopped green chillies and kasundi
  • Mix in well
  • Let it sit in the fridge for about 30 minutes and serve
  • You may store in an airtight glass or stone jar to enjoy for a few days
