Kabiraji Cutlet
Kabiraji Cutlet is a popular Bengali street food, takes its name from the English “Coverage Cutlet”. The influence of the English cuisine is clearly seen in this recipe.
Ingredients:
- 500 g minced mutton
- 1 onion
- 6 eggs
- 2 green chillies
- ½ cup breadcrumbs
- 2 tbsp ginger paste
- 2 tsp garlic paste
- ½ tsp asafoetida powder
- 2 tsp cumin powder
- 2 tsp coriander powder
- 1 tsp chilli powder
- Salt to taste
- Sprigs of cilantro leaves
Method:
- Chop the onions finely.
- Wash and chop the green chillies and cilantro leaves.
- Now mix the ginger paste, garlic paste, green chillies and cilantro leaves together
- Add cumin, coriander, chilli and asafoetida powders.
- Add salt and mix well
- After this add the minced mutton and mix very well.
- Now shape out cutlets about 1½ inch in diameter and ½ inch in thickness from the mixture
- Take the eggs and whisk thoroughly
- Dip the cutlets you had moulded in this whisked egg and then roll them on breadcrumbs.
- Heat oil in a pan.
- Pour a small amount of the whisked egg and roll the cutlets in this.
- Fry on low heat.
- Serve hot with onion rings
