Versatile Egg and Shrimp salad or Sandwich Stuffing
Egg and Shrimp salad or Sandwich Stuffing is a very versatile stuffing which can be had as a salad and also as a stuffing for sandwich or grilled sandwich. You can make it & keep it for a day or two. I often make it and keep it for the next day (or even a couple of days). The egg devil that wooed your guests one evening can easily turn into a sandwich stuffing the next morning for breakfast or a healthy salad for lunch. That’s what I call life saving recipe!
Ingredients –
- hard boil eggs
- shrimps
- butter
- potato
- mayonnaise
- sweet mustard sauce
- lettuce (optional)
- salt to taste
- pepper
- Peas (optional)
As egg devil –
- Hard Boil Eggs
- Peel and cut vertically into half.
- If you want to make an egg devil kind of thing, scoop out the yolk. boil a potato, peel and mash.
- on a pan, cook shrimp with butter, salt and pepper.
- Now mash everything together with your hands and add mayonnaise, sweet mustard sauce, salt, pepper.
- Shape it into small balls and put them back into the hollows of the egg white. serve.
As a cold Salad –
- If you want to serve it as a cold salad on a bed of greens, hard boil eggs.
- Peel & mash the whole egg along with the other ingredients mentioned above.
- Put a scoop on the bed of greens (say lettuce), and then serve cold.
- For added flavour, drizzle with dressing of your choice.
Sandwich stuffing –
- For a sandwich stuffing, hard boil eggs. peel. mash the whole egg along with the other ingredients mentioned above.
- Lightly toast bread, and spread butter.
- Put a layer of lettuce, tomato, onions. This step is optional.
- Then put in the stuffing and cover with another slice.
- Serve with sauce
