Khejur Badam Kismis diye ghee bhaat — Fried Rice cooked with dates, nuts and raisins
Fried rice when cooked with dates, cashews and raisins becomes not only a palate changer but also something exotic. The cumin, ginger and green chillies add a zest to the fried rice and also balance the sweetness that dates and raisins bring in. The cashews and peanuts lend a delectable crunch. This is what makes this rice a wonderful blend of flavours and textures.
Ingredients –
- Basmati Rice
- Whole Cumin Seeds
- Chopped Ginger
- Chopped green chilies
- Peanuts (roasted in ghee)
- Dates/ Khejur
- Raisins/ Kishmish
- cashews (roasted in ghee)
- salt
- sugar
- Ghee
- Garam Masala (Cinnamon, Cardamom and Cloves crushed coarsely)
- Garam Masala Powder
- White oil
Preparation-
- Prepare the Basmati rice. Do not overcook it
- Heat white oil & ghee in a pan
- Season it with garam masala, cumin, finely chopped each of ginger and green chillies
- Add the Basmati rice
- Add the cashew and peanuts to the Basmati rice
- Now add salt, sugar, raisins and the halved dates
- Mix this gently
- Sprinkle the Garam Masala powder on top
- Mix in well and cook for a while
- Take it off flame and allow some standing time and then serve
