Alu Mushroom

When I was staying in the United States, the abundance and varieties of mushrooms available even in the commonest grocery stores intrigued my interest. Grills, stir fries etc. were not too commonly consumed in my home on a regular basis. That’s what made me venture into mushroom recipes that are more Indian. Also, this is a versatile recipe. You may add any vegetable of your choice alongside the mushroom. It could be green peas, cauliflower florets, diced bell peppers or anything that catches your fancy.

 

Ingredients –

  • Potatoes
  • Mushroom
  • Onion
  • Oil
  • Ginger- Garlic paste
  • Turmeric powder
  • Chili powder
  • Cumin powder
  • Salt & Sugar

 

Preparation –

  • Peel the potatoes and cut them into cubes
  • Wash the mushrooms well. Depending on the type and size of mushroom used, you may need to dice them before cleaning. I often used the chopped button mushroom that was readily available.
  • Heat oil in a pan and sauté the chopped onions
  • Now add the ginger-garlic paste
  • Add the chopped tomatoes
  • Now add the chopped potatoes
  • After stirring them well, add the mushrooms
  • Now add turmeric, chili & cumin powder
  • Add salt, sugar & garam masala; and cook till the spices are properly cooked.
  • Add enough water to let the potatoes boil, but not too much since we don’t want a soupy gravy either.

Once the vegetables are done, put off the flame to serve.
